Libyan Fish Soup

1 tsp. oregano |

1 tsp. cumin |

1 tsp. olive oil |

1/4 onion, chopped |

1/2 lb. fish fillets, such as bass or red snapper |
|
 |
3 lemons |

6 c. fish bouillon |
|
 |
1 tbsp. tomato paste |
|
 |
1/4 tsp. cayenne pepper |
|

4 cloves garlic |

 |
Sauté onion in a large pot with olive oil until soft and transparent for 5 to 10 minutes. |

Meanwhile, mince cloves garlic. |

Stir in cayenne pepper and garlic. Simmer for 1 minute more. |

Stir in the fish bouillon, tomato paste, oregano, and cumin. Parboil mixture. Add fish fillets. |

Reduce heat and cook for 10 minutes more, or until fish is tender. |

Cut lemons in half. Serve fish soup with lemon halves. |
