Lentil Soup
Lentil soup is one of the basic dishes on the menu list for iftar, the evening meal during Ramadan.

 |
1 c. red lentils, whole or split |
|
 |
1 medium onion, cut into slices |
|
 |
6 c. water |
|
 |
2 tbsp. olive oil |
|
 |
seasoning |

 |
Wash lentils in a bowl with cold water. Rinse and drain. |

In a large pot, place lentils with water and parboil. |
|
 |
Reduce heat. Place a lid over pot and simmer. |
|
 |
Meanwhile, Sauté onion in a skillet with olive oil over high heat until golden brown. |

 |
Add onions, salt, and pepper to skillet. Simmer for 25 to 35 minutes more. |
|
 |
Soup is done when lentils are soft. |
|
 |
Serve hot with lemon wedges and pita bread. |
