Lentil Soup


Lentil soup is one of the basic dishes on the menu list for iftar, the evening meal during Ramadan.
المقادير
1 c. red lentils, whole or split  
1 medium onion, cut into slices  
6 c. water  
2 tbsp. olive oil  
seasoning  
طريقه التحضير
Wash lentils in a bowl with cold water. Rinse and drain.
In a large pot, place lentils with water and parboil.
Reduce heat. Place a lid over pot and simmer.
Meanwhile, Sauté onion in a skillet with olive oil over high heat until golden brown.
Add onions, salt, and pepper to skillet. Simmer for 25 to 35 minutes more.
Soup is done when lentils are soft.
Serve hot with lemon wedges and pita bread.
