Cut tomatoes with a spoon. Peel and chop the carrots. Set aside. |

Chop onion. Drain and chop the pimento. Clean out seeds from the green pepper, then chop. |

Sauté onion, pimento, and green pepper in a large kettle with olive oil for 1 to 2 minutes. |

Simmer on medium heat until soft. |

Add flour and stir very well. |

Add tomatoes, carrots, lentils, salt, and water. |
|
 |
Place a lid over kettle to cover. |
|
 |
Cook over very low heat for about 2 hours. |
|
 |
Place in serving soup bowls and serve hot. |
