Lentil Soup Madrid Style


المقادير
4 tbsp. olive oil  
2 tbsp. all-purpose flour  
1 large onion  
1 can whole pimento  
1 tbsp. salt  
8 c. water  
1 green pepper  
2 c. tomatoes  
3 carrots  
2 c. lentils  
طريقه التحضير
Cut tomatoes with a spoon. Peel and chop the carrots. Set aside.
Chop onion. Drain and chop the pimento. Clean out seeds from the green pepper, then chop.
Sauté onion, pimento, and green pepper in a large kettle with olive oil for 1 to 2 minutes.
Simmer on medium heat until soft.
Add flour and stir very well.
Add tomatoes, carrots, lentils, salt, and water.
Place a lid over kettle to cover.
Cook over very low heat for about 2 hours.
Place in serving soup bowls and serve hot.
