Lemon Chicken Soup
In Thailand, sharp flavors are widely admired. A popular treat, this satisfying soup is served throughout the country.

3 c. chicken broth |
|
 |
1 tsp. sugar |
|
 |
10 oz. chicken breast halves |
|
 |
1 c. bite-sized pieces fresh cauliflower |
|
 |
2 tbsp. fish sauce |
|
 |
1 1/2 tbsp. lemon juice |
|
 |
1 tbsp. grated lemon peel |
|
 |
1 tomato |
|
 |
1/2 c. fresh mushrooms, sliced |
|

|
You can substitute fresh cauliflower with 1 c. frozen chopped cauliflower, thawed.
Shrimp, fish, or crab can be substituted for the chicken. |

Bone and skin the chicken breast halves, then cut into pieces. |

Cut the 1 tomato into 8 wedges. Set aside. |

Parboil broth in a large saucepan over high heat. |

 |
Add grated lemon peel. Reduce heat to medium and simmer lidless for 5 minutes. |

Add chicken, cauliflower, tomato, and mushrooms. Simmer lidless for 3 or 4 minutes. |

 |
When chicken and cauliflower are tender, add sugar, fish sauce, and lemon juice. Stir thoroughly. |

Transfer into serving bowls and serve hot. |

|
You can serve this soup over rice or with rice on the side. |
