Lamingtons


Lamingtons are sponge cakes shaped in cubes. They were called after Baroness Lamington, wife of the governor of an Australian state at the beginning of the 1900s. To date, this dish is a favorite with both Australian adults and young kids.

To prepare 12 lamington cakes, you need:  
1 18-oz. package yellow cake mix  
For icing:  
3 c. coconut, chopped lengthwise  
3 c. powdered sugar  
3 tbsp. melted butter or margarine  
pinch of cocoa  
2 c. boiling water

Take cake off the package and back in a 9 x 13-inch cake pan. Follow baking instruction on package.
Remove from oven and allow to cool.
Cut cake into twelve pieces.
Prepare icing by combining powdered sugar with cocoa into a bowl.
Add melted butter and boiling water. Stir thoroughly until well blended and soft.
Put this bowl on top a pan filled with simmering water.
Place coconut in a shallow bowl next to saucepan.
Place a wire rack on the other side of the coconut to form a lamington assembly line.
Dunk each cake square with a fork into the hot icing. Make sure cake piece is well coated with icing. Allow excess icing to drip off the cake piece.
Roll cake in the coconut to make sure it is well coated. Do the same with other cake pieces.
Now, place cakes in a cool spot until icing becomes firm.
