Lamb and Rice
Lamb and Rice is a delicious Somalian recipe usually served in celebrations and for guests and people usually eat it with their hands without using fork or spoon

2 c. uncooked brown rice |

1/2kg boneless lamb |
|
 |
2 tbsp. vegetable oil |
|
 |
1 chopped onion, |
|
 |
1 minced garlic clove |
|
 |
2 chopped tomatoes, |
|
 |
1 tsp. ground cumin |
|
 |
Dash of ground cloves |
|
 |
1 tsp. ground cinnamon |
|
 |
1/2 c. canned tomato paste |
|
 |
Salt and pepper to taste |
|
 |
5 c. water |

 |
Cut lamb into bite-size pieces and make it ready for use |

 |
Sauté onion, garlic, and lamb in preheated oil for 10 minutes with stirring frequently |

Add tomatoes, cumin, cloves, cinnamon, tomato paste, and water and mix with other ingredients well |
|
 |
Parboil the mixture and then put the rice and seasoning |
|
 |
Lower heat and cover the pot and leave to simmer for 20 minutes and then serve hot |
