Lamb Stewed with Parsley

1/2 kg lamb |

 |
1 cup parsley leaves, cut into tiny pieces |

2 tablespoons tomato paste |
|
 |
2 grated onions |
|
 |
1 tablespoon bread crumbs |
|
 |
3 tablespoons grated hard cheese |
|
 |
1/2 teaspoon cayenne |
|
 |
4 beaten eggs |
|
 |
1/2 cup dried white beans |
|
 |
Olive oil |
|
 |
1/2 teaspoon tabil |
|
 |
Salt and black pepper |

 |
Soak beans a noght before, strain, then add fresh water, bring to a boil for 25-30 minutes, drain, and keep juice. |

Slice lamb into small cubes and coat well with seasoning. |

Brown onions until wilt, add lamb, and keep frying until liquid has been totally evaporated. |

Add salt, pepper ,cayenne, beans, tabil, tomato paste dissolved in enough beans' boiling juice to just cover meat, cook until all tender, then remove from flame. |

Mix beaten eggs with parsley, bread crumbs, grated cheese, salt, and pepper, and add to lamb mixture, stirring till well blended. |

Grease oven casserole and spill this mixture in it, then bake in moderate oven for 16-19 minutes. |
