Lamb Stew (Tava)
Tava is a recipe from Cyprus and it is so-named because it bears the name of a kitchen utensil (an unglazed terra-cotta casserole with tight fitting lid) in which this dish is always prepared.

1 kg lamb |

 |
1 tablespoon tomato paste |
|
 |
5-7 tomatoes, shelled and diced |
|
 |
1 teaspoon cumin powder |
|
 |
Salt and black pepper |

 |
3 onions, cut into coarse pieces |

Slice lamb into small cubes. |

 |
Thin down tomato paste in 1/2 cup warm water, move into casserole, add all the ingredients. |

Cover tightly with lid and bake in moderately-heated oven for 2-3 hours until meat is tender and sauce thickens. |
