Lamb, Stewed with Mint

1/2 kg lamb |

Ghee |

1/2 kg tomatoes, shelled and diced |

1 teaspoon tabil |

6 beaten eggs |

 |
3 tablespoons grated cheese |

2 grated onions |
|
 |
1 tablespoon mint powder |
|
 |
1/2 cup bread crumbs |
|
 |
Salt and black pepper |

 |
Slice lamb into small pieces and coat with salt and pepper. |

Put ghee on flame to heat and broil onions until golden, then add lamb and fry until liquid evaporates. |

Mix with tomatoes, salt, pepper, tabil, and spice, stir, cook over low flame for 29-31 minutes, and add hot water if the juice is not covering meat. |

Drain the meat, reserving the broth, then put meat in greased casserole. |

Mix beaten eggs with cheese, mint, bread crumbs, salt, and pepper. |

 |
Grease a casserole very fine, add the meat and 1 cup of the above broth, and bake in moderately-heated oven for 28-20 minutes. |
