Kubeiba with Yogurt
Lebanese, Syrian, and Palestinian recipe

kubeiba shami or patties |

2-3 cups yogurt |
|
 |
1 teaspoon powdered mint |
|
 |
1 egg white |
|
 |
1/2 cup chickpeas |
|

Leave chickpeas in water to soak a night before, strain, add fresh water, bring to a boil for 6-7 minutes, then Drain. |

Prepare (but not fry)kubeiba shami or patties, put in pot, then add chickpea. |

 |
Mix egg whites into yogurt, pass through wire sieve onto kubeiba, and cook uncovered for 66-90 minutes. |
|
 |
Sprinkle with mint powder then serve (hot or cold). |
