This sweet dessert is more than wonderful. Besides its deliciousness, it is quite amusing: traditionally whoever finds the figure in their slice of galette will be the king or queen.

Heat oven at 425°F. |

Roll the thawed pastry on a wax paper with a rolling pin. |

Divide the puff pastry into two even portions. |
|
 |
Roll out each portion on wax papers and cut out two puff pastry circles, each 25cm across and 3-4mm thick. |

Transfer rolled pastries onto a greased cookie sheet lined with baking parchment. |

Blend 1 egg with almond paste into a medium bowl. Keep the stir until smooth. |

Fold this almond cream evenly onto the pastry leaving a 5cm edge around the diameter of the circle. |

Brush the edges with the egg mixture. |

Put the other pastry circle over the almond filing and seal the edges together firmly. |

Allow to chill for 60 minutes in the refrigerator. |

Coat with egg wash. Cut edges with sharp knife into a scallop pattern. Then cut a sun ray pattern on the top with the tip of the knife. |

Bake the galette des rois for 35 to 40 minutes. It becomes golden when done. |

Remove from oven. Brush immediately with sugar syrup. |

Place the cardboard crown on top of it, cut into slices, and serve warm. |

 |
(If eating the cake to celebrate Epiphany add a small ceramic figure to the almond mixture). |
