Jollof Rice


المقادير
6 pieces skinless chicken  
1 tsp. salt  
1 tsp. black pepper  
Vegetable oil  
1 chopped onion  
2 cubes beef bouillon  
Dash of ground red pepper  
1/2 tsp. dried thyme  
1 1/2 c. water  
Tomato paste  
1 c. uncooked rice  
2 cups of vegetables mixture including green peas, chopped beans, carrots, green peppers, and tomatoes

Fry chicken pieces in preheated oil for 5 minutes or till brown on both sides
Remove chicken pieces from the pan and sauté onion till tender
Add bouillon, red pepper, thyme, water, and tomato paste and cook for 15 m.
Put rice and vegetables mixture in the pan of frying onion and coat with oil well and cook the mixture on medium fire for half an hour and serve hot
For different taste, you can replace chicken with beef
