Jollof Rice

6 pieces skinless chicken |

1 tsp. salt |

1 tsp. black pepper |

 |
Vegetable oil |
|
 |
1 chopped onion |
|
 |
2 cubes beef bouillon |
|
 |
Dash of ground red pepper |
|
 |
1/2 tsp. dried thyme |
|
 |
1 1/2 c. water |
|
 |
Tomato paste |
|
 |
1 c. uncooked rice |
|
 |
2 cups of vegetables mixture including green peas, chopped beans, carrots, green peppers, and tomatoes |

Fry chicken pieces in preheated oil for 5 minutes or till brown on both sides |

Remove chicken pieces from the pan and sauté onion till tender |

Add bouillon, red pepper, thyme, water, and tomato paste and cook for 15 m. |

Put rice and vegetables mixture in the pan of frying onion and coat with oil well and cook the mixture on medium fire for half an hour and serve hot |

For different taste, you can replace chicken with beef |
