In Spain, there is a great deal of factories producing good-quality nougat candy, especially at Alicante and Jijona. This sweet is made with special tastes on the Spanish Christmas Eve. Jijona's Nougat is made of honey and nuts (especially almonds and hazelnuts).

Place nuts on separate cookie sheets and toast in oven at 350 F for 10 minutes. |

Put nuts in a kitchen towel and remove their skin by rubbing them gently. |

Chop nuts into fine pieces. |

Beat egg whites until slightly stiff. Coat nuts with whipped eggs. |

Blend honey and sugar in a large pan. Place over medium heat until melt. |

Mix the nut mixture into the honey mixture. |

Simmer for about 10 minutes over low heat, keeping the stir. |

Remove from heat. |

Bring a small cake tin and line inner sides with wax paper or rice paper. |

Spread the turron into the tin. |

 |
Allow to cool, then sprinkle with cinnamon. |

Cut turron into squares. Serve. |

If you wish to have a thicker turron, you'd better use a smaller cake tin. |
