Honey Cake


Honey cake is not only presented on religious days in Russia, but a dessert that appeals to almost all children's appetites.

To prepare 9 to 12 pieces of this dessert, you need:  
2 eggs  
1 c. honey  
1/2 c. brown sugar  
2 c. all-purpose flour  
1/2 tsp. baking soda  
1/2 c. almonds, sliced  
1/2 c. raisins  
You can substitute any king of nuts for almonds.

Bring oven to 350°F heat.
Butter and dust with flour a 9 x 5-inch loaf pan.
Beat eggs with a fork in a small bowl.
Add sugar and blend thoroughly.
Place flour into a large mixing bowl.
Stir in the egg mixture and baking soda. Keep the stir.
Add honey and raisins then mix for 3 to 5 minutes.
Pour dough into pan. Use your hand to distribute evenly.
Garnish with a sprinkle of nuts.
Bake for 45 to 55 minutes. Cake is done when a knife inserted into the center comes out clean.
Remove from oven and allow to cool in pan for 10 minutes.
Transfer from pan onto a wire rack.
Serve cake with whipped cream or jam.
