Holy Week Doughnuts


A common sight in the region of Andalusia (in south of Spain) is households preparing this dessert on delightful occasions especially during la Semana Santa, or Holy Week.

To prepare 20 doughnuts, you need:  
3 c. flour  
3 eggs  
3/4 c. sugar  
1/2 c. milk  
peel from 1 lemon  
peel from 1 orange  
1 tsp. baking powder  
olive oil  
cinnamon  
sugar

Separate eggs into yolks and whites
Beat yolks in a large bowl.
Add sugar little by little, then stir in milk, lemon and orange peels.
Use an electric mixer to beat egg whites until slightly stiff.
Add to the egg yolk mixture. Blend slowly.
Stir in baking powder and flour until soft.
Cover and arrow to rest for 1 hour.
Brush palms of your hands. Lightly flour your hands and shape the batter into pancake-like patties.
Fry in oil on low-medium heat.
Turn over doughnuts about 1 minute after they begin to float.
Remove from fire and transfer onto paper towels.
Garnish with a sprinkle of sugar and cinnamon, then serve.
