Holiday Meat Pie


المقادير
For preparing the crust, 3 1/2 c. sifted flour,  
3 tbsp. olive oil  
2 to 3 tbsp. warm water  
1 egg  
1 tsp. salt  
For preparing the filling: 4 1/2 c. warm  
1kg cubed leg of lamb  
2 c. tomato sauce  
4 beaten eggs  
1 c. minced onions  
1 1/2 c. chopped celery  
1 1/2 c. minced fresh parsley  
Dash of minced garlic  
Dash of minced fresh mint or  
Dash of dried mint  
Dash of salt  
1/2 tsp. pepper  
1/2 c. olive oil  
1 c. grated kefalotiri  
1 tsp. ground cinnamon  
1 c. uncooked white rice  
1 tbsp. butter and 1 tbsp. olive oil for greasing pan  
طريقه التحضير
Bring meat cubes to boil in hot water for 60m.
Prepare the crust by and when the meat is done remove it
Divide the dough into 2 halves and roll each part on a flat floured surface
Spread one of the rolls in a greased baking pan covering all its base
Mix the eggs with grated cheese and cinnamon, flour salt olive oil and mix well with fork until well blended
Add meat to the mixture and then pour all of the ingredients in the baking pan
Spread the second half of the dough to cover the pan, crimp the edges well and brush the surface with oil
Bake for 40 minutes or till golden and then remove from oven and let to cool
Cut into pieces and serve warm
