Glazed Kiwi Tart


Quite nutritious and rich in vitamin C, this sweet dish, named after the kiwi bird of New Zealand, is a lovely light dessert with a mixed-fruit flavor.

Ingredients needed to prepare pastry:  
1 9-in. unbaked pie shell  
Ingredients needed to prepare filling:  
3 ripe kiwifruit  
1 8-oz. package cream cheese, at room temperature  
1 tsp. vanilla extract  
1 c. sugar  
3 tbsp. heavy cream  
Ingredients needed to prepare glaze:  
apricot preserves  
1 tbsp. water

Peel kiwifruit with a paring knife and cut into thin slices. Set aside.
Prick the bottom and sides of the pastry shell with a fork.
Bake pastry.
Prepare filling by mixing cream cheese, sugar, vanilla, and heavy cream together in a medium bowl. Stir until tender and soft.
Fold cream cheese filling on cooled pastry shell.
Distribute slices of kiwifruit evenly to top cream cheese filling, overlapping them in circles.
For the glaze, mix apricot preserves with water in a small saucepan and place on fire until preserves melt.
Allow to cool and stir from time to time.
Fold glaze over kiwifruit.
Allow to chill until ready to serve.
