Chop onion into tiny pieces. |

Rinse fish with running cold water. Pat with paper towels to dry. |

Skin fish and cut into small 1-inch pieces. |

Place fish a medium bowl. |

Stir in ginger, onion, cayenne pepper, and salt. |

Let stand for 15 minutes. |

Place an amount of oil in a saucepan over medium-high heat. |

 |
Fry the fish in oil. Flip to fry both sides. |
|
 |
When done, remove from heat and place on a serving plate. |
|
 |
Serve hot over rice. |
|
 |
Top with sprigs of parsley or green onion as a decoration (if desired). |
