Ginger-Fried Fish


المقادير
2 lb. haddock, cod, or halibut (or any firm white fish)  
1/2 tbsp. ground ginger  
pinch of salt  
2 tbsp. peanut or corn oil  
1 onion  
1/2 tsp. cayenne pepper  
parsley sprigs or green onion to garnish  
طريقه التحضير
Chop onion into tiny pieces.
Rinse fish with running cold water. Pat with paper towels to dry.
Skin fish and cut into small 1-inch pieces.
Place fish a medium bowl.
Stir in ginger, onion, cayenne pepper, and salt.
Let stand for 15 minutes.
Place an amount of oil in a saucepan over medium-high heat.
Fry the fish in oil. Flip to fry both sides.
When done, remove from heat and place on a serving plate.
Serve hot over rice.
Top with sprigs of parsley or green onion as a decoration (if desired).
