To prepare the garlic sauce, peel the cloves garlic and chop the white onion very thinly. |

Crush garlic with a mortar and salt very well. |
|

Mix salted crushed garlic with sour orange juice, and onion in a bowl. Set aside for 30 to 35 minutes. |

Meanwhile, peel yucca and remove any tough parts from its center. Cut into 2-inch sticks. |

Place the sticks in a saucepan. Add salt. Pour enough water to cover. Parboil. |

Lower the heat. Place a lid over pan to cover, then place over heat. |

Cook for 30 minutes until tender. |

Remove from saucepan and allow to drain. Keep yucca sticks in saucepan |

Make a mixture of oil and the garlic sauce into another separate saucepan. |
|
 |
Place saucepan over flame and simmer over medium-high heat. |
|
 |
When mixture bubbles, remove from heat. |
|
 |
Place into the yucca saucepan. |
|
 |
Mix well and place on flame over medium heat until barely browned. Serve hot. |
