Fried Yucca with Garlic Sauce


This delicious recipe makes a perfect side dish for roast pork.

Garlic sauce:  
1/2 c. sour orange juice  
1 large white onion  
1 tsp. salt  
6 cloves garlic  
Fried yucca:  
1 tsp. salt  
1/3 c. olive or vegetable oil  
1 1/2 lb. yucca

To prepare the garlic sauce, peel the cloves garlic and chop the white onion very thinly.
Crush garlic with a mortar and salt very well.
Mix salted crushed garlic with sour orange juice, and onion in a bowl. Set aside for 30 to 35 minutes.
Meanwhile, peel yucca and remove any tough parts from its center. Cut into 2-inch sticks.
Place the sticks in a saucepan. Add salt. Pour enough water to cover. Parboil.
Lower the heat. Place a lid over pan to cover, then place over heat.
Cook for 30 minutes until tender.
Remove from saucepan and allow to drain. Keep yucca sticks in saucepan
Make a mixture of oil and the garlic sauce into another separate saucepan.
Place saucepan over flame and simmer over medium-high heat.
When mixture bubbles, remove from heat.
Place into the yucca saucepan.
Mix well and place on flame over medium heat until barely browned. Serve hot.
