Fried Rice Balls
You may find several types of rice in the market, you can determine the best and the worst kind from its volume not of its weight and the main difference between these types is the amount of water absorbed.
Before cooking rice, you should rub it in water to get ride of the starch powder that makes it sticky. So you should rinse till you make sure that the water is clean and this should be shortly before cooking it in order not to spoil it.
There are numerous ways for preparing rice, and more or less similar in the ingredients and the preparation of the rice itself. Iraqi recipe

1/2 teaspoon mixed spice |

1/2 kg ground beef |

 |
2 cups rice |
|
 |
1 egg, ghee |
|
 |
1/2 cup chopped celery, or parsley |
|
 |
dash of tumeric soaked in 1 tablespoons of rose water |
|
 |
1 teaspoon saffron |
|
 |
2 tablespoons raisins |
|
 |
1-2 tablespoons flour |
|
 |
salt and pepper |
|
 |
1/2 cup slivered almonds |
|

 |
Parboil rice with saffron and salt until tender in 4 cups of water. |

strain and add lightly beaten egg and with fingers dipped in rose water, |

 |
Mix fried beef with raisins, mixed spice, seasoning, celery or parsley, and almonds, and cook this mixture over slow fire for 10 minutes. |

Knead rice till being soft dough. |

Take a small amount of rice dough in palm of hand, moistening with rose water, make a hole and rotate half closing palm. |

Stuff with the above mixture then close rounds to form oval balls then put on floured surface till finishing all the dough. |

Deep fry in ghee and serve on a bed of parsley. |
