Fried Pastry


Fried pastry is widely favored although Mexico in general, and the state of Oaxaca in particular. This dish is a wonderful treat on delightful occasions especially Christmas Eve.

Following ingredients make 20 to 24 fried pastry:  
To make the pastry, you need:  
4 c. all-purpose flour  
2 tbsp. milk  
2 eggs  
2 tbsp. sugar  
1 tbsp. baking powder  
1/4 c. vegetable oil  
1 c. warm water  
1 c. vegetable oil  
To prepare topping, you need:  
1/2 c. sugar  
3 tbsp. cinnamon

Make a mixture of flour, 2 tbsp. sugar, and baking powder in a large bowl and blend well.
Combine eggs and milk in another bowl. Add to flour mixture and stir well. Add small amount of oil.
Add warm water and blend until dough can be easily worked with.
Lightly dust a flat surface and transfer dough onto it.
Knead dough until smooth then divide into 20 to 24 pieces.
Shape the dough pieces into balls. Use your hands to flatten balls on the flat surface. When dough flattened, cover with a towel for 20 minutes.
Bring flattened balls on a lightly floured surface and roll each one with a rolling pin into circles, 6 or 7 inches in diameter
Allow to rest for 4 to 6 minutes.
Re-roll each ball (with hands), then fry in an electric frying pan with 360°F heat until crisp.
Remove and drain on a paper towel.
Prepare topping by combining sugar and 3 tbsp. cinnamon in a small bowl.
Sprinkle balls with sugar-cinnamon mixture, then serve hot.
