Fried Liver

1 kg liver |

2-3 tablespoons plain flour |
|
 |
2 tablespoons parsley, cut into very small pieces |

Cooking oil |
|
 |
2 spring onions, sliced very finely |

 |
Salt and black pepper |

Place liver to rest in salted water for 30 minutes, strain, then slice into 3 cms cubes. |

Cover with seasoned flour and fry in the oil, until you get a brown color and avoid overcooking. |

 |
Sprinkle with salt and black pepper and decorate with spring onions and parsley on top. |
