Rinse spinach under a stream of running water, strain, then slit coarsely. |

Fry onion in heated oil till softens. |

Add the spinach and keep stirring over slow flame until liquid goes away. |

Reduce liquid by increasing heat and make it only cover base of pan. |

Mix with cheese, salt, and pepper and stir. |

Break eggs onto the spinach and cover pan. |

Cook over medium heat. |

hen eggs are set, serve in dishes. |
