Fried Carp


This dish is a basic treat on festive occasions in Austria, especially on Christmas Eve dinner.

3 1/2-lb. carp fillet  
1/2tsp. salt  
1/2 c. bread crumbs  
7 tbsp. canola oil  
1 lemon  
1/2 c. flour  
2 eggs  
طريقه التحضير
Beat the eggs. Slice lemon. Set aside.
Rinse and cut fish fillets into 4 slices.
Marinate for 60 minutes in salt and place in the refrigerator.
Place flour, beaten eggs, and bread crumbs into 3 separate bowls.
Roll fish slices, each at a time, in flour, then eggs, then bread crumbs.
Place a frying pan with oil over heat.
Transfer prepared fish slices onto pan to fry both sides of each.
When two sides are golden brown (after about 8 minutes), remove slices from heat.
Serve the fried carp over a bed of lemon slices.
