Peel and chop onion. Set aside. |

Rinse and cut fish into bite-sized pieces. |
|

Place in a large saucepan over high heat. Pour 4 c. water over fish. |

Chop tomatoes, parsley, and peppers into tiny pieces. Add them all to the saucepan. |

Stir in salt and thyme. |

 |
Bring mixture to a boil. |
|
 |
Lower the heat. Place a lid over to cover. |
|
 |
Cook fish for 20 minutes. |
|
 |
When done place in serving plate and serve warm at once. |
