Flat bread is a very popular Turkish recipe that appeals to everyone's appetite. Households prepare this bread as a basic component on Iftar table throughout the holy month of Ramadan. Flat bread is better served with a sprinkle of nigella seeds on its top.

Combine dry yeast and sugar in 1 c. lukewarm water in a medium bowl and allow to dissolve. Set aside in a warm place for 10 minutes until light. |

Add flour and blend thoroughly. |
|

Wrap with a plastic cover and allow to rise for 25 to 30 minutes. |

Place bread flour into a large bowl. Add raised yeast mixture, salt, 3 tbsp. olive oil, and 1 c. lukewarm water. |

Stir in flour with remaining ingredients, until you have a sticky dough. |
|
 |
Transfer dough onto a flat lightly floured surface (like a tabletop) and knead well for about 15 minutes until moist and less sticky. |

Brush a medium bowl lightly with olive oil. Put dough in bowl and wrap with plastic cover and allow to rise for 60 minutes until doubled in bulk. |

Preheat oven to 450ºF. |

Cut dough into two balls and put on a cookie sheet. Cover with a damp kitchen towel and allow to rise for 30 minutes. |

Put an empty cookie sheet in warm oven. |
|
 |
Gently press one ball of dough into a disk to form a circle. |
|
 |
Pinch rim about 1 inch in from edge with your thumb and forefinger. Lightly prick tops of dough with your fingertips. Do same with other ball. |

Remove cookie sheet from oven and put bread on sheet. |
|
 |
Coat surface with beaten egg. |
|
 |
Sprinkle with nigella (or sesame) seeds. |
|
 |
Bake for 10 to 15 minutes. When done, flat bread will have a golden color with crusty edges. |

Serve fresh from oven. |
