Fish with Mustard Sauce

2 lbs. fillets of cod, walleye, or any firm whitefish |

 |
4 c. water |
|
 |
1 tsp. salt |
|
 |
6 peppercorns |
|
 |
1 tbsp. carrot, cut lengthwise |
|
 |
1/2 lemon, chopped finely |
|
 |
2 bay leaves |
|
 |
mustard sauce |
|
 |
1 medium onion |
|

Peel and slice onion. |
|
 |
Place onion in a saucepan. |
|
 |
Add water, lemon, bay leaves, carrot, salt, and peppercorns to onion. Parboil over high heat. |

Add a layer of fish fillets. Lower the heat and place a lid to cover. |
|
 |
Cook for 10 minutes. Fish flakes when done. |

 |
Keep the cooking liquid to prepare the mustard sauce. |
|
 |
Remove fish from heat and place on a serving platter. |
|
 |
Serve warm with mustard sauce. |
