Fish Ragout with Coriander


المقادير
1 teaspoon ground coriander  
1 kg diced ripe tomatoes  
1 kg fish  
10 garlic cloves  
oil, salt, mixed spices  
طريقه التحضير
Wash fish, rub with lemon juice and salt for 5-10 minutes, saute in preheated oil and put in casserole.
Mix garlic with salt and coriander and mice finely, then fry in oil,
Add diced tomatoes and cook for 10 minutes over moderate fire.
Cover fish with this mixture and put in the center of a preheated moderate oven for quarter of an hour.
There are several ways for preparing Fish ragout including Fish Ragout with cumin inwhich cumin replaces the coriander used in this recipe without in difference in the steps and with another good taste.
