Fish Baked in Tomato Sauce and Tamarind

7 crushed garlic cloves, |

2 sliced onions, |

 |
1 fish, about 1 1/2 kg |

2 tablespoons tamarind |
|
 |
2 peeled and diced tomatoes, |

 |
3 tablespoons tomato paste |
|
 |
3 tablespoons lemon juice |
|
 |
2 sliced green peppers, |
|
 |
1 teaspoon mixed spice |
|
 |
1 teaspoon coriander powder |
|
 |
1 teaspoon cumin |
|
 |
dash of ginger powder |
|
 |
olive oil, salt |
|
 |
1/2 cup chopped coriander leaves, |
|
|
|
For preparing the tamarind, 2 tablespoons of tamarind should be soaked and drained to make 1/2 concentrate cup. |

Blend tomato paste with the tamarind juice, mix half the amount of fresh coriander, garlic, mixed spice, and lemon juice thoroughly. |

Cut fish from head to tail and coat it with halve of this mixture and set aside. |

Place the rubbed fish in a grease oven tray until well cooked. |

Saute sliced onions and pepper lightly and mix with, then stir in ginger, salt, cumin, and coriander, and add to peeled tomatoes |

pour this mixture over the fish with fresh coriander and tamarind juice and leave in oven about 5 minutes to absorb the aroma of this mixture. |
