Festive Rice Pudding (Moghlie )
Festive Rice Pudding or Moghlie is one of the traditional recipes in Lebanon served in celebrations of new born babies and in holidays.

1/2c. ground rice |

3 to 3 1/2 c. water |
|
 |
1/2 c. sugar |
|
 |
1/2 tsp. aniseed |
|
 |
1 tsp. caraway seed |
|
 |
Dash of ground ginger |
|
 |
2 tbsp. chopped almonds |
|
 |
2 tbsp. chopped pistachios |
|
 |
2 tbsp. chopped walnuts |

 |
Cover the ground rice with cold water and sugar and chill for some hours |

 |
Add the mixture gradually to 2 cups of boiling water and stir well until the mixture boils and becomes very smooth |

Reduce fire and leave it to simmer covered for 10 minutes to become thick |

 |
Remove from fire and leave 3 minutes to cool and then serve in transparent bowls and garnish with chopped nuts and serve cold |
