Egusi Soup


المقادير
2/3 c. egusi seeds (or pumpkin seeds)  
1 or 2 chili peppers (or jalapeño peppers)  
any combination of fresh  
1 lb. fresh spinach  
2 large tomatoes  
1 small onion  
1 1/2 lb. beef tenderloin  
2/3 tsp. salt  
1/4 tsp. black pepper  
1/4 c. peanut oil  
1 8-oz. can tomato sauce  
1 1/2 c. water  
crab, shrimp, and smoked fish

Process egusi seeds in a blender for 30 to 40 seconds. Place into a bowl. Set aside.
Wash and slice beef into bite-sized cubes. Add seasoning.
Sauté meat in a large frying pan with oil over medium-high heat for 3 to 5 minutes.
Chop 2 large tomatoes. Peel and chop the small onion. Seed and chop chili peppers (or jalapeño peppers).
Blend tomatoes, onion, and peppers in a food processor for about 30 seconds.
When the texture becomes smooth, add tomato mixture to meat.
Reduce heat to medium-low. Place a lid to cover the frying pan and simmer for 1 1/2 to 2 hours.
When meat has become tender, add tomato sauce, 1 c. water, crab, shrimp, and smoked fish.
Cook for 10 minutes more. Meanwhile, clean spinach then chop finely.
Add spinach and egusi seeds. Cook for 10 minutes more. Serve.
