This recipe came originally from the West Country and was served on delightful occasions especially on Easter. Americans call this spicy fruited dish, cookies.

Bring oven to 400°F heat. |

Combine butter and sugar until fluffy. |

Add egg yolk and beat gently. |
|

Add flour and spices and mix well then add currants and orange and lemon peel. |

Add enough amount of milk to form a soft dough. |
|

Transfer dough onto a floured flat surface |

Knead dough gently then cut into 2-inch circles. |

Prick the tops of biscuits using a fork. |

Transfer dough onto two greased baking sheets and bake for 10 minutes. Then remove from oven. |

Brush tops lightly with beaten egg white and sprinkle with sugar, then return biscuits to oven. |

Bake for about 5 minutes, until the tops of biscuits have a golden color, then remove from oven. |

Transfer onto wire racks and allow to cool. |

When cooled, keep biscuits in an airtight container. |
-When grating the lemon and orange, avoid getting the white pith which has a bitter taste. You can use a grater, a potato peeler, or a zester instead.
-To cut dough into circles, you can use a cookie cutter or the rim of a small drinking glass.
