East African Plantain Soup
This soup a basic dish for the celebration of the most festive Islamic holiday of Eid al-Fitr in Tanzania.

Peel and slice plantains. Beat in a blender until soft and smooth. |

Add 1 c. chicken broth. Stir. |
|

Place the mixture into a Dutch oven. |
|

Add the remaining 5 c. of broth. Stir until well blended. |
|

Place a lid over the oven and simmer over medium heat for 45 minutes. Stir often. |

 |
Add seasoning (salt and pepper) to soup to taste. |
