Danish Rice Pudding
Denmark has its own distinctive Christmas rice pudding that differs from other rice pudding recipes in Norway and Sweden. This sweet dish is usually served with raspberry sauce on delightful occasions.

To prepare Rice Pudding, you need: |

1 1/2c. cooked white rice |
|
 |
2 c. milk |
|
 |
2 envelopes unflavored gelatin |
|
 |
1 c. chilled whipping cream |
|
 |
1/2 c. water |
|
 |
2 tsp. vanilla extract |
|
 |
1/4 c. chopped almonds |
|
 |
1/2 c. sugar |
|
 |
1/2 tsp. salt |
|
 |
To prepare Raspberry sauce, you need: |
|
 |
1 1/2 tsp. cornstarch |
|
 |
1 10-oz. package frozen raspberries, thawed |
|
 |
1/2 c. apple |
|
 |
1 tbsp. cold water |
|
|
|
Instead of apple, you can use currant jelly. |

Place gelatin, sugar, water, and salt in a saucepan over low heat and mix well for 1 minute. |

When gelatin is dissolved, add milk, rice, vanilla, and almonds and keep the stir. |
|
 |
Transfer the saucepan into a bowl with ice water and stir often for 13 to 15 minutes, or until mixture thickens. |

Beat chilled whipping cream until stiff. Coat rice mixture with cream |
|
 |
Pour rice mixture into an ungreased 1 1/2-quart mold. |

 |
Cover and allow to cool (or place into refrigerator) for 3 hours. |

Prepare raspberry sauce and top rice pudding, then serve cold. |
To prepare raspberry sauce, you need to make it as follows:
Boil raspberries (with juice) and jelly in a saucepan.
In another container, mix water and cornstarch, then add to raspberries. Stir well.
Again, boil mixture for 1 minute keeping the stir.
Serve the raspberry sauce warm sauce on top of cold pudding.
