Curried Java Soup


Curried java soup is one of the basic dishes on the food list during the holy month of Ramadan in some Islamic countries.
المقادير
1 lb. beef stew meat  
3 beef or chicken bouillon cubes  
4 c. water  
1 tsp. shrimp paste  
1 stalk lemongrass  
1 tsp. turmeric  
1 tbsp. ground coriander  
1 c. green beans, fresh or frozen  
5 small red potatoes  
1 c. reduced-fat coconut milk  
2 tbsp. butter  
4 scallions  
2 cloves garlic  
1 red chili pepper  
1 tbsp. ground dried ginger  
1/2 tsp. ground cumin  
1 salam leaf  
1/2 tsp. sugar  
طريقه التحضير
Cut beef stew meat into bite-sized pieces.
Place beef pieces in a Dutch oven. Add water and bouillon cubes. Parboil.
Reduce heat and cook meat mixture for 60 minutes.
Meanwhile, chop scallions. Mince cloves garlic and red chili pepper.
Mince. Place these ingredients in a wok with melt butter over medium-high heat.
Add, ginger, turmeric, coriander, cumin, and shrimp paste and simmer for 5 minutes.
Dice the green beans. Peel and chop the red potatoes. Set aside
Add lemongrass and salam leaf and cook for 2 more minutes.
Add spice mixture to the beef stock and cook for 5 minutes.
Add green beans and potatoes. Stir well.
Place a lid over the wok. Simmer for extra 10 minutes.
Add coconut milk and sugar.
Remove lid, and simmer for 5 minutes.
When soup is done, the vegetables become tender.
Transfer onto serving plate and serve hot.
