Curried java soup is one of the basic dishes on the food list during the holy month of Ramadan in some Islamic countries.

Cut beef stew meat into bite-sized pieces. |

Place beef pieces in a Dutch oven. Add water and bouillon cubes. Parboil. |

Reduce heat and cook meat mixture for 60 minutes. |

Meanwhile, chop scallions. Mince cloves garlic and red chili pepper. |

 |
Mince. Place these ingredients in a wok with melt butter over medium-high heat. |

Add, ginger, turmeric, coriander, cumin, and shrimp paste and simmer for 5 minutes. |

Dice the green beans. Peel and chop the red potatoes. Set aside |

Add lemongrass and salam leaf and cook for 2 more minutes. |

Add spice mixture to the beef stock and cook for 5 minutes. |

 |
Add green beans and potatoes. Stir well. |

 |
Place a lid over the wok. Simmer for extra 10 minutes. |

 |
Add coconut milk and sugar. |
|
 |
Remove lid, and simmer for 5 minutes. |
|
 |
When soup is done, the vegetables become tender. |

 |
Transfer onto serving plate and serve hot. |
