Cuban Cookies


Cuban cookies is a sweet dish most favored by Cuban children especially when served with tart lime juice on birthdays and other delightful occasions.

To make 3 to 4 dozen cookies, you need:  
1 1/2 c. flour  
1 stick butter, at room temperature  
2 egg yolks  
1 tsp. fresh lime juice  
1/2 tsp. grated lime peel  
1 tsp. baking powder  
1 c. sugar  
powdered sugar  
1/2 tsp. salt  
1 tsp. vanilla extract

Bring oven to 375°F heat.
Use an electric mixer (or a wooden spoon) to blend cream butter and sugar in a large container.
Add lime juice, lime peel, egg yolks, and vanilla and mix well.
In another bowl, make a mixture of flour, salt, and baking powder. Add to butter mixture and blend thoroughly.
Fold dough into a waxed paper and allow 1 hour for refrigeration.
With your fingertips, shape dough into balls in the size of walnuts and place onto ungreased baking sheets.
Bake for 8 to 10 minutes the cookies start to have a golden color a wire rack
Cool cookies on baking sheets for 5 minutes. Then transfer onto
Sprinkle with powdered sugar.
