Crisp Pastry, with Cheese Filling


المقادير
chicken broth  
2 packets Crisp Pastry or ruoaa  
2 tablespoons cooking oil  
For preparing filling: 1/8 kg skimmed cheese  
2 hard boiled eggs  
pepper, 1 egg  
1/8 kg salted hard balkan cheese  
** You can buy the cracker-bread or Crisp Pastryfrom the grocery store.

Grate balkan cheese, mash the skimmed cheese, and hardboiled eggs.
Mix all these ingredients with beaten raw egg and pinch of pepper.
Proceed as in 272, above, substituting the above filling for savory minced beef.
Grease one oven pan, heat stock, then take one layer of pastry at a time, dip in stock,
Line the bottom of the oven pan completely with pastry and sprinkle with cooking oil and repeat the same process for 3 or 4 times
spread the filling, then repeat spreading the pastry, dipping it in hot stock and sprinkling it with cooking oil.
Drain the layers with the remaining oil and bake in moderate oven.
When top browns, turn over into other pan and return to oven to brown both sides.
Cut into sections while hot, and you can serve it whether hot or cold.
