Slice the large yellow onion into narrow wedges. |

Seed and cut the green pepper into strips. |

Peel and mince the cloves garlic. |

Sauté onion, green pepper, and garlic for 3 to 4 minutes in a saucepan with oil over medium-high heat. |

When onion and green pepper are soft, stir in tomato sauce, vinegar, oregano, and salt and pepper to taste. |

Lower the heat. Place a lid over saucepan to cover. |

Cook sauce for 10 to 15 minutes and serve. |
