Creole Sauce


المقادير
To prepare about 3 cups, you need:  
4 tbsp. olive oil  
1 large yellow onion  
1 large green bell pepper  
6 to 8 cloves garlic  
2 c. tomato sauce  
1 c. red wine vinegar  
1/2 tsp. oregano  
salt and pepper

Slice the large yellow onion into narrow wedges.
Seed and cut the green pepper into strips.
Peel and mince the cloves garlic.
Sauté onion, green pepper, and garlic for 3 to 4 minutes in a saucepan with oil over medium-high heat.
When onion and green pepper are soft, stir in tomato sauce, vinegar, oregano, and salt and pepper to taste.
Lower the heat. Place a lid over saucepan to cover.
Cook sauce for 10 to 15 minutes and serve.
