Creamy eggplant (2)

1 kg brown round eggplant |

 |
2 tablespoons finely chopped parsley, |

2 tablespoons flour |
|
 |
2 cups hot milk, salt |
|
 |
2 tablespoons grated cheese, |
|
 |
2 tablespoons butter |
|

 |
Bake eggplant, drain and mash. |
|
 |
Melt butter and fry flour over very slow fire till golden. |

Remove from fire and stir in hot milk stirring constantly, |
|
 |
Return to fire and allow to bubble, then stir in the eggplant, season and cook for 10 minutes. |

Remove from fire, stir in the cheese and chopped parsley and serve. |
