Creamy Pumpkin Soup


A common smell all through Australia is that of this delicious golden soup. Use your imagination and make your own version that shall add a perfect taste as a warming treat.

2 1/2 c. chicken or vegetable broth  
1 15-oz. can pumpkin  
1/2 c. butter  
2 tsp. minced parsley  
sour cream  
1 large yellow onion  
1/2 tsp. curry powder  
1/2 tsp. salt  
2 c. half-and-half  
1 tsp. cinnamon

Peel and chop the one large yellow onion.
Melt butter in a medium-sized saucepan.
Add chopped onion and fry until lightly soft and tender. Stir often.
Add curry powder and simmer for about 1 to 2 minutes more.
Remove fried onion from heat.
Transfer into a food processor.
Add pumpkin, half-and-half and salt. Blend until texture has become smooth.
Return pumpkin mixture into saucepan.
Add chicken or vegetable broth to saucepan.
Place saucepan over low heat. Stir soup often.
In a separate bowl, mix cinnamon, minced parsley, and sour cream.
Top soup with sour cream and serve.
