Creamy Eggplant (1)


المقادير
1 kg brown round eggplant  
1/2 cup yogurt, olive oil  
3-5 garlic cloves, crushed  
1 tablespoon finely chopped parsley,  
طريقه التحضير
Fry eggplant in the oil.
Mash with yogurt and garlic.
Stir in the parsley and serve.
