Cornstarch Cookies


Cornstarch is one of the basic components in traditional cuisine in Brazil. It is included in several savory dishes, cookies, and sweets favored by both chil¬dren and adults as good treats.

To make about 3 dozen cookies, you need:  
2 c. cornstarch  
1 1/2 sticks softened unsalted butter  
1 beaten egg  
1 c. sugar  
1/4 tsp. salt

Bring oven to 375˚F heat.
Make a mixture of cornstarch, sugar, and salt in a large mixing bowl.
Add egg and mix in softened butter with your hands. Leave aside for 15 minutes.
Lightly butter a cookie sheet.
Shape dough into small balls, transfer onto cookie sheet and press down smoothly.
Bake dough for 14 to 17 minutes. When done, cookie will be golden in color.
Cool cookie on the cookie sheet before. Transfer onto a wire rack to cool completely.
If you wish, you can add 2 oz. grated coconut to the dough when you add the butter.
