Mix combine meat, cinnamon, zaatar, onion, salt, pepper, and cumin finely |

Place an aluminum foil on a flat surface and place some of the mixture in the center and wrap it to make an oblong roll |

Remove from oven and unwrap using a fork and pierce with a sharp knife to make sure that it is brown from inside not only the outer part |

Let to cool and then serve sliced and cold |

You can tie loaves with string and cook in a Dutch oven instead of wrapping it in foil. |
