Trim the French or Italian bread of crusts and chop into pieces. |

Finely chop the garlic and onion. |
|

Clean out and chop the green pepper. |
|

Peel and chop cucumbers and tomatoes. |

Make a mixture of cucumber, tomato, onion, green pepper, garlic, and bread in a deep bowl. Stir well. |

Add vinegar, water, and salt and stir well. |

Crush mixture in a food processor. Discard any pulp left in the processor. |

Place mixture into a large bowl. |

Add olive oil and tomato paste to bowl. Whisk together. |

Place tight lid over bowl or cover with a foil or plastic wrap. |

Allow to chill in refrigerator for at least 2 hours. |

 |
Use a spoon to stir soup gently. Serve. |
