Cold cucumber soup is a popular favorite in southern Asia, especially in Korea. This refreshing dish is best served in the summer so as to add a good taste hot day.

Peel the cucumbers. Shred in half. Remove bits and inedible seeds. Slice into thin half rounds. Set aside. |

Chop the one green onion into very tiny pieces. |

Place onion in a large bowl. |

Add cucumbers, soy sauce, vinegar, salt, and sesame seeds to the bowl. |

Allow mixture to marinate for 25 to 30 minutes. |

Add water to bowl. Blend thoroughly. |

Place in refrigerator to chill for about 1 to 2 hours. |

Sprinkle soup with cayenne pepper. |

Add the ice cubes to soup to keep it cold until serving. |

Serve cold. |
