Choroko Sauce


المقادير
1 1/2 c. dried Shirakiku  
3 or 4 cloves garlic  
dash black pepper  
1/2 c. water  
brand mung beans  
2 tbsp. vegetable oil  
3 medium tomatoes, chopped into mouthful pieces  
1 large onion  
1/2 tsp. seasoned salt  
dash salt

Peel and chop the large onion.
Peel and crush the cloves garlic.
Place beans in a bowl and add enough cold water to cover. Allow a soaking time all through the previous night.
Use a colander to drain the soaked beans. Transfer onto
Pour water into a saucepan, enough amount to cover its lower half. Parboil over strong flame.
Place beans into boiling water and simmer for 1 to 1 1/2 hours or until tender.
Use a colander to drain the beans.
Transfer into a bowl and bound with a fork.
Sauté tomatoes, onions, and garlic in a large frying pan with heated oil over medium heat.
Add mashed beans.
Sprinkle seasoned salt, salt, black pepper, and 1/2 c. water.
Cook for 15 to 20 minutes.
Remove from flame and pour over rice or with chapatis.
