Peel and chop the large onion. |

Peel and crush the cloves garlic. |

Place beans in a bowl and add enough cold water to cover. Allow a soaking time all through the previous night. |

Use a colander to drain the soaked beans. Transfer onto |

Pour water into a saucepan, enough amount to cover its lower half. Parboil over strong flame. |

Place beans into boiling water and simmer for 1 to 1 1/2 hours or until tender. |

Use a colander to drain the beans. |

Transfer into a bowl and bound with a fork. |

Sauté tomatoes, onions, and garlic in a large frying pan with heated oil over medium heat. |

Add mashed beans. |

Sprinkle seasoned salt, salt, black pepper, and 1/2 c. water. |
|
 |
Cook for 15 to 20 minutes. |
|
 |
Remove from flame and pour over rice or with chapatis. |
