Chickpea Soup

2 cups chickpeas |
|
 |
1 bone marrow |
|
 |
1 sliced onion |
|
 |
2 loaves stale bread |
|
 |
6-7 crushed garlic cloves |
|
 |
3 tablespoons lemon juice |
|
 |
1 teaspoon cumin |
|
 |
Salt and black pepper |
|
 |
Pinch of harissa |
|
 |
Olive oil |
|

 |
Leave chickpeas in water to soak a night before, strain, add fresh water, onion and bone marrow and parboil until tender. |

Shake marrow into soup, and pound with onion, then season. |

Fry garlic and harissa in preheated olive oil, stirring continuously to avoid they stick to bottom of pot. |

Add chickpeas, broth and simmer for 5 minutes longer. |

Remove from flame and stir in cumin and lemon juice. |

 |
Break bread into small morsels, put in serving dish, spill the chickpea soup on top, then serve immediately. |
