Cassava Sweet
Cassava is a woody shrub native to South America and is extensively cultivated as an annual crop in tropical and subtropical regions. It grows easily in the dry and has edible starchy tuberous root, which provide great quantity of carbohydrates. Therefore, African households use it as a basic component in many meals. This sweet dish transforms the ordinary vegetable into a savory dessert.

1 lb. sweet cassava |

1 16-oz. can reduced-fat coconut |

1 1/2 c. sugar |
|
 |
2 tsp. cinnamon |

Peel and cut cassava into 1/2-inch pieces |

Put coconut milk and cassava into in a medium saucepan over low heat and stir. |

Keep stirring and add sugar. |

Cook and stir from time to time for 28 to 30 minutes or until cassava is smooth and tender. |

When mixture has thickened, cook for extra 3 minutes. Remove from heat and cool for 25 to 30 minutes. |

Transfer cassava mixture to a glass serving bowl. |

 |
Spread cinnamon on top then serve. |
