Caramel Custard


Spanish people prefer to have light savory sweets as an evening snack. This dish is widely known and favored as a nice treat.

To prepare custard, you need:  
2 c. milk  
1/2 c. sugar  
1/2 tsp. vanilla extract  
3 slightly beaten eggs  
To prepare sauce, you need:  
1 1/2 tbsp. lemon juice  
3 beaten egg yolks  
3/4 tsp. salt  
1/2 c. brown sugar  
3 tbsp. butter

Start with bringing oven to 325 F heat.
Place warm milk in a saucepan over low heat for 8 to 10 minutes. Keep stirring until custard is done then leave aside.
Use an eggbeater to beat eggs, sugar, and vanilla in a large bowl. Add to milk then blend carefully.
Place all mixture into a baking dish then place the dish in a pan with water. Bake for 1 hour.
Meanwhile, prepare sauce by boiling water in lower part of a double boiler.
Add the beaten egg yolks, salt, and brown sugar in the top of the double boiler then stir until thick and creamy.
Add butter and lemon juice a little at a time, keeping the stir.
Insert a knife into middle of custard to make sure it is done. If the knife comes out clean, now take custard from the oven.
Pour sauce over the top then serve hot or cold.
