Burnt Rice Pudding


المقادير
1 2/3 c. boiling water  
1/2 c. uncooked short-grain rice  
4 c. milk  
1 c. sugar  
1 tsp. cinnamon  
1/8 c. rice flour  
2 tsp. vanilla extract  
طريقه التحضير
Add boiling water to rice in a small saucepan, stir, then cover.
Reduce heat to a simmer and cook for 19 to 25 minutes until water is absorbed.
Make a mixture of milk and sugar and place into a medium saucepan, then cook over low heat and stir until sugar dissolves.
Make a mixture of rice flour and 2 or 3 tablespoons of the warm milk, blending to make a thick paste then add the rice. Boil over medium heat.
Add rice flour paste to rice and milk mixture, keeping the stir.
Reduce heat to a simmer and cook for 20 minutes, stirring from time to time.
Remove from heat and mix in vanilla.
Distribute mixture into four ovenproof serving bowls and sprinkle with cinnamon.
To serve warm, put bowls into a preheated broiler for 5 to 10 minutes until their surface go brownish.
